Clean Creamy Taco Soup

I don't know about you, but on a chilly day, I love a bowl of delicious hot soup. Here is one of my favorite recipes I came up with when trying to reinvent taco night. Yes, we have a taco night in our house (every Thursday).

Clean Creamy Taco Soup

Ingredients:

2 TB organic grass fed butter
2 TB organic flour
1 Cup warm organic grass fed milk
1 Cup water
1 lb organic grass fed ground beef
1/2 organic onion
Several cloves of organic garlic
Clean taco seasoning (recipe below)
4 ears of organic corn on the cob (frozen works too)
1/2 jar organic salsa with out preservatives
1/2 cup of shredded organic cheddar
1/2 cup of shredded organic Gouda (or whatever cheese you like)
Salt and pepper to taste.

How to make Clean Taco Seasoning:

1 TB organic ground cumin
1 TB organic chili powder (watch out for filler toxins in your spices. Only buy pure ingredients).
1 TB organic garlic powder
1 TB organic onion powder
1/4 TB organic crushed red pepper

Mix all the spices together and store in a glass or stainless steel spice shaker. You can multiple the recipe to make a larger quantity.


Creamy Taco Soup Directions

1. Ground the beef and add taco seasoning to taste. Then set aside. I keep the fat in it because I like the flavor. The meat I get is pretty lean so it doesn't make my soup too greasy anyway.

2. Steam the corn on the cob and set aside. You can also use leftover corn on the cob. Just cut the kernels off before adding them to the soup.

3. Next melt the 2 TB of butter in a saucepan over medium heat. Add the flour and stir well.

4. Gradually stir in the warm milk. Continue to cook over medium heat stirring constantly. It will smooth out, come to a boil, and thicken.

5. Once it thickens, reduce the heat and add the shredded cheeses, salt, and pepper to taste. Add more of each if you desire.

6. Add the cup of water and stir till well mixed. This increases the liquid volume and will allow the soup to simmer without becoming too thick.

7. Add the beef, corn, and salsa. Mix well.

8. Let simmer for 20 minutes stirring occasionally.

9. Let cool a couple minutes before serving and ENJOY!!!

This soup reheats well on the stove top. I know because we kicked our microwave to the curb years ago ;)
