Clean Eating Birthday Party


Preparing a toxin free organic party is intimidating at first but is actually not that hard. All parties take planning. I started by finding recipes and converting them into clean versions. I made my ingredient list and got cracking. Below are recipes to a delicious and filling party spread. Enjoy!


Appetizer 


Organic Fruit and Veggie Tray: Wash and cut your favorite organic fruit and veggies accompanied by an array of organic cheeses.

Clean Chili (Serves 6-7)

Ingredients
1 TB organic butter
  • 2 1/4 lbs lean organic grass fed ground beef
  • 1 large organic yellow onion, finely chopped
  • 3 cloves of organic garlic, finely minced
  • 2 (14.5) oz cans organic diced tomatoes (Trader Joe's canned tomatoes do not contain BPA)
  • 3 (8 oz) cans organic tomato sauce (Trader Joe's canned tomato sauce does not contain BPA)
  • 2 1/2 Tbsp organic chili powder (Make sure the only ingredients in the chili powder are spices. Avoid fillers at all costs!)
  • 1 Tbsp organic ground cumin
  • 1 Tbsp organic paprika
  • 2 tsp organic cocoa powder
  • 1 tsp organic granulated sugar
  • 1/2 tsp organic ground coriander
  • Salt and freshly ground black pepper, to taste
  • 1 (15 oz) can organic dark red kidney beans, drained and rinsed (Trader Joe's kidney bean cans do not contain BPA)
  • 1 (15 oz) can organic light red kidney beans, drained and rinsed
  • Serve topped with:
  • Organic Cheddar and  Organic Monterey Jack cheese, organic sour cream, and organic green onions.
  • I also served organic toxin free corn dipping chips (similar to Fritos but MUCH better).

Directions:
  • Heat butter in a large saucepan over moderately high heat. Once butter is melted, carefully crumble ground beef into butter and cook, stirring occasionally until beef has browned. Drain most of fat from beef, leaving about 2 - 3 Tbsp in with beef (this is optional, I think it adds flavor but you can drain it all if you'd prefer. I kept all the fat). Pour browned beef into a 6 or 7 quart slow cooker. Add in onion, garlic, diced tomatoes, tomato sauce, chili powder, cumin, paprika, cocoa powder, sugar, coriander and season mixture with salt and pepper to taste. Cover with lid and cook on low heat for 6 hours.
  • Stir in dark and light red kidney beans and allow to heat through, about 10 minutes. Serve warm with desired toppings 
Recipe can be doubled or tripled easily! It freezes well too.

Desserts (Yes, Plural )

Chocolate Cupcakes (Makes 24)

2.5 C organic whole wheat flour or organic all-purpose flour
1.25 tsp baking powder (gmo and aluminum free)
2.25 tsp baking soda
1.25  C organic cocoa powder
1.25 tsp salt
2.5 C organic sugar (can substitute with organic raw honey)
2 large free range chicken eggs 
1.25 C warm water
1.25 tsp organic vanilla
0.5 + 2 TB melted organic butter or organic applesauce
1.25 C Milk vingar mixture (Mix 2.5 TB of vinegar + milk to = 1.25 C Let mixture sour for a few minutes)

1. Mix the first 6 ingredients together.
2. Whisk in eggs, water, milk mixture, butter, and vanilla
3. Mix for 3 minutes
4. Pour batter into cupcake liners.
5. Bake at 350 for 20-25 minutes

Organic Frosting

1/3 C solid organic butter
1/4 C sea salt
1 tsp organic vanilla or chopped up organic vanilla bean
3.5 C organic powdered sugar
3-4 TB organic milk

1. Use an electric mixture to mix butter, salt, and vanilla.
2. Add powdered sugar and mix.
3. Add milk and mix until it turns into frosting.

To make it chocolate, add 1/4 cup of organic cocoa powder.

If you have leftovers after frosting your cupcakes, than you can freeze it :)
We also put chocolate covered strawberries on top for added decoration. 

If you want to add color to your frosting, hear is a link for toxin free food colors. I like to  raspberries and spinach at Christmas time. 

Chocolate Covered Organic Raspberries

This is just like my chocolate covered strawberries recipe, but with raspberries instead. Prepare the chocolate the same, and skewer 2 organic raspberries on a toothpick. Dip in chocolate and let it harden in the fridge. These will fly off the plate when the desserts come out! If you want added decadence, sprinkle with organic powdered sugar.

Clean Ice Cream

I find this one to be tricky! I have yet to find an ice cream that is organic and clean. Most organic ice creams have soy lecithin or carageenan in it, which, in my opinion, should be avoided.  If you want, you could make your own from scratch, but I found Trader Joe's Vanilla Ice Cream to be satisfactory for ingredients. It tastes very very good too! Here are some picks so you can see the ingredients for your self.
