Clean Organic Banana Chocolate Chip Muffins

Banana bread is a staple in our home. My son loves to eat bananas but he rarely finishes a whole banana. So, I started cutting off the part he bit and tossing the rest into a lunch baggie and freezing it. Once I get enough to make a loaf of banana bread (or muffins), I thaw them out. This way I always have bananas on hand. Warning: when the bananas thaw, the juice is brown, and the bananas look disgusting. The first time I did it, I was really nervous to open the bag because I feared the smell would be rancid, but I was pleasantly surprised to smell sweet bananas! And, they are very easy to mush up! Here is our family's favorite recipe. I hope you enjoy it as much as we do!

Organic Banana Chocolate Chip Muffins

3 or 4 ripe organic bananas (mashed)
1/3 cup melted organic butter
3/4 cup organic sugar
1 egg
1tsp organic vanilla (optional)
1 tsp baking soda
pinch of sea salt
1 1/2 cups organic whole wheat flour
1 cup Enjoy Life chocolate chips (optional)

1. Preheat oven to 350 degrees
2. Mix butter and mashed bananas
3. Mix in sugar, egg, and vanilla
4. Sprinkle baking soda and salt. Mix
5. Add flour and mix, then add chocolate chips and mix
6. Bake in buttered muffin tin or loaf pan
7. Bake loafs 45-60 minutes. Bake mini muffins 20 minutes. Bake regular muffins 30-45 minutes.
